Merry-Go-Round, healthy and quick recipe!!
This month, we all share a quick and healthy recipe that leaves us with plenty of time to create...Well, meringue is quick and healthy, but I am not sure about the cream… Oh well never mind lol!!!Enjoy!!
Raspberry Meringue Roulade
4 large egg whites
250 gr of sugar
Raspberries and whipping cream
Beat egg whites until you get soft peaks. Slowly add the sugar and continue beating until the meringue is thick and shiny. Rub a little bit of the meringue between two fingers and if you can still feel the sugar, keep beating.
Spread the meringue evenly over a rectangular dish and bake in a 200°C oven for about 8 minutes. The meringue should be turning a golden colour, and the surface should be starting to crisp up. Turn the oven down to 160°C and bake for another 8 minutes. The meringue should still be soft in the centre.
Remove from the oven and let it cool for about 20 minutes.
Spread with whipped cream, sprinkle raspberries over the surface and roll. Don't worry if the meringue starts to crack a little. Just keep rolling. Transfer to a platter and sprinkle with powdered sugar.
This isn’t a pic of mine, coz we wolfed the meringue down before I remembered to take a pic lol… and this one looks much nicer than mine anyway!!!

How did you know? My favourite dessert always includes meringue, raspberries and cream! This roulade looks lovely. Yummy!
